Bison Meatballs

Tender, juicy, and so flavorful these bison meatballs are the amped up healthier version of your typical beef meatballs. I am using Big Horn Bison Lemon Pepper seasoning, which is essential for adding the brightness and bold flavor to these meatballs. If you have ventured into the land of bison, I strongly urge you to try. This recipe is the perfect gateway to give bison its fair shot. It is more nutrient dense, has less saturated fat, and is more tender because of its thinner marbling. It also has a better environmental footprint because bison is usually grass fed and are free roaming!

INGREDIENTS
1lb ground bison
1/2c panko breadcrumbs
1 egg
3/4c whole milk
2T olive oil
1/4c grated Parmesan
2tsp Italian seasoning
1T Big Horn Bison Lemon Pepper
3T chopped fresh parsley

Mix together, roll into golf ball sized balls, and bake at 350deg for 15-18 minutes. Finish in your favorite red sauce and top with more parm!!!
