Instructions

Step 1: Prepare the Chicken

  1. In a large bowl, combine the buttermilk, Big Horn Bison SPG, and paprika. Add the chicken and marinate for at least 30 minutes (or overnight for maximum flavor).
  2. In another bowl, mix the flour, cornstarch, and Big Horn Bison Honey Habanero seasoning.
  3. Heat about 2 inches of vegetable oil in a deep skillet or fryer to 350°F.
  4. Remove chicken from the buttermilk, shaking off excess, and dredge it in the seasoned flour mixture. Press firmly to ensure a crispy coating.
  5. Fry the chicken in batches for 5–6 minutes per side or until golden brown and cooked through. Drain on a wire rack or paper towels.

Step 2: Make the Waffles

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk the eggs, milk, Big Horn Bison Honey, melted butter, and vanilla. Gradually add the wet ingredients to the dry, mixing until smooth.
  3. Preheat your waffle iron and cook waffles according to the manufacturer’s instructions until golden brown.

Step 3: Prepare the Hot Honey Drizzle

  1. In a small saucepan, heat the Big Horn Bison Honey, butter, and Big Horn Bison Honey Habanero seasoning over low heat. Stir until smooth.
  2. Add hot sauce if desired for an extra kick, and remove from heat.

Step 4: Assemble and Serve

  1. Place a waffle on a plate, top with crispy chicken, and drizzle generously with the hot honey.
  2. Garnish with fresh herbs like parsley or thyme (optional) and serve with additional honey or hot sauce on the side.
